“A long wine making without any oenological additions”.
All wines are made the same way. For that matter, every vintage is the result of a unique and precise terroir. The mature grape harvest is manual, then directly crushed within the warehouses of the estate. The wine settling is cursory and natural. The indigenous yeasts on the grapes allow the alcoholic fermentation to start naturally. The alcoholic and malolactic fermentations are conducted in the same 228-litre oak barrel. This wine making, on fine sediments without any stirring, can last from 18 to 30 months, depending on the vintage. The Domaine Robert-Denogent only makes one racking before the bottle-filling by ourselves.
